  • 3/4 cup onion (finely diced)
  • 1 egg
  • 2 tsp garlic (freshly minced)
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dried oregano
  • 3.5 cups cooked brown rice
  • 4 cups cucumbers (sliced into half-moons)
  • 2 cups kalamata olives
  • 1.25 cup tzatziki sauce
  • fresh dill
  • 1 lemon (cut into wedges for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine ground turkey, breadcrumbs, diced onion, egg, minced garlic, salt, pepper, and oregano. Mix until well blended.
  3. Shape the mixture into 1-inch meatballs and arrange on a parchment-lined baking sheet.
