  • 1/3 cup sliced almonds
  • 1/4 cup diced celery
  • 1/4 cup diced green onions
  • 1/4 cup diced Granny Smith apple
  • 1/3 cup mayonnaise
  • 2 tablespoons sour cream
  • 1.5 teaspoons curry powder
  • 1 teaspoon turmeric
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon salt

Instructions

  1. Poach the chicken in boiling water until fully cooked (165°F), about 10-15 minutes. Let it cool before cubing.
  2. In a bowl, mix mayonnaise, sour cream, curry powder, turmeric, ground ginger, and salt until smooth.
  3. Dice celery, green onions, and Granny Smith apple; combine with grapes in another bowl.
  4. Toast sliced almonds in a small pan over medium heat for 1-2 minutes.
  5. Combine cubed chicken with the fruit and vegetable mixture; pour in dressing and mix well.
  6. Serve chilled in sandwiches, lettuce wraps, or on its own.
