  • 4 russet potatoes, cut into ¼-inch-thick matchsticks
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon paprika or smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • Flaky sea salt, to taste
  • 1 small shallot, finely chopped or grated
  • 1 clove garlic, minced or grated
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Kosher salt and black pepper, to taste
  • 4 fresh pitas or naan, warmed
  • Lettuce, herbs, and feta, for serving
  • 1 large avocado, halved
  • 1/4 cup plain Greek yogurt
  • 1/2 cup fresh basil
  • 1 jalapeño, seeded if desired
  • Juice of 1 lemon

Instructions

  1. Preheat oven to 425°F.
  2. Toss the russet potatoes with olive oil on a large baking sheet. Sprinkle with flaky sea salt. Spread them out in an even layer without overcrowding the pan. Bake for 15-20 minutes. Flip them halfway through baking time. Bake an additional 15 minutes until they are crisp.
  3. In a mixing bowl, combine ground chicken, shallot, garlic, oregano, paprika, cumin, kosher salt, and black pepper. Mix until just combined. Coat your hands in a bit of oil and roll the mixture into tablespoon-sized meatballs (about 14-15 meatballs). Place them on a parchment-lined baking sheet. Bake for about 15 minutes until cooked through and crispy.
  4. In a small bowl, mix together paprika, garlic powder, onion powder, and cayenne pepper. Once the fries are done baking, remove them from the oven. Toss immediately with the seasoning mix. Adjust salt according to your taste.
  5. In a blender, combine ripe avocado halves, Greek yogurt, fresh basil leaves, jalapeño (if using), lemon juice, and salt. Blend until smooth and creamy. Taste and adjust seasoning if needed.
  6. Spread some avocado sauce onto each plate as a base. Arrange warm pitas around it. Top with lettuce, feta crumbles, seasoned fries, and chicken meatballs. Finish by sprinkling everything lightly with flaky sea salt before serving.
