  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1/4 cup cocoa powder
  • 1 tablespoon milk or cream

Instructions

  1. Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. Whip egg whites until soft peaks form; gradually add 1/4 cup sugar until stiff peaks form.
  3. In another bowl, beat egg yolks with remaining sugar until pale, then stir in vanilla.
  4. Sift together flour, cocoa powder, baking powder, and salt; fold into yolk mixture gently.
  5. Fold in beaten egg whites carefully without deflating them.
  6. Spread batter in prepared pan and bake for 10-12 minutes until springy.
  7. Roll the cake in a towel dusted with powdered sugar and let cool completely.
  8. Whip cream with powdered sugar and vanilla until stiff peaks form; spread over cooled cake before rolling it up tightly again.
  9. Make chocolate buttercream by beating softened butter with cocoa powder, milk, and powdered sugar until smooth.
  10. Frost the chilled rolled cake with buttercream and decorate as desired.
