  • 2 cups cheddar cheese (shredded)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons cornstarch mixed with 2 tablespoons water
  • Fresh parsley for garnish
  • Extra shredded cheddar cheese for garnish

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat. Drain excess fat.
  2. Add chopped onion and minced garlic to the skillet; cook until translucent.
  3. Transfer the beef mixture to the slow cooker. Layer in diced potatoes, sliced carrots, and celery.
  4. Pour in the broth and sprinkle with thyme, parsley, paprika, salt, and pepper.
  5. Cover and cook on low for 6–8 hours or high for 3–4 hours until vegetables are tender.
  6. In the last 20 minutes of cooking, stir in heavy cream, cheddar cheese, and milk. For a thicker soup, add cornstarch mixed with water.
  7. Serve hot, garnished with fresh parsley and extra cheese.
