  • 4 cloves garlic (minced)
  • 6 cups chicken broth
  • lbs bone-in skinless chicken breast
  • 8 oz cream cheese (softened)
  • 2 cans cannellini beans (drained)
  • 1 can whole kernel sweet corn (drained)
  • Toppings: Diced avocado, lime wedges, tortilla strips

Instructions

  1. Combine all seasoning ingredients in a bowl.
  2. In a large pot over medium heat, melt butter and sauté diced onion and jalapeño for about 5 minutes. Add garlic and cook for another minute.
  3. Stir in flour to coat vegetables; cook for 2 minutes.
  4. Gradually pour in chicken broth while stirring continuously, then add half and half.
  5. Blend one cup of drained beans with some broth until smooth; return to pot with remaining beans.
  6. Add seasonings, hot sauce, and green chilies; bring to a boil then simmer uncovered for 15 minutes.
  7. Season chicken breasts with salt and pepper; add to pot along with corn and simmer until cooked through (15–20 minutes).
  8. Shred chicken and return it to the pot; stir in softened cream cheese until melted.
  9. Adjust seasoning as needed before serving hot.
