  • 7 to 8 cups seedless watermelon (cut into ¾ inch cubes)
  • 1 ½ cups fresh blueberries
  • 1 cup crumbled feta cheese
  • Fresh mint and basil leaves (thinly sliced)
  • Juice of 1 ½ limes
  • 1 tablespoon extra virgin olive oil
  • 1 to 2 tablespoons honey
  • A pinch of salt

Instructions

  1. In a mason jar, mix lime juice, olive oil, honey, and salt. Shake well to combine.
  2. In a large serving bowl, add watermelon cubes, blueberries, sliced mint and basil leaves, and ¾ cup of crumbled feta.

  4. Garnish with the remaining feta cheese and additional mint and basil leaves if desired. Serve immediately for optimal flavor.
