  • 1 box instant pistachio pudding
  • 1 cup club soda (or 7 Up)
  • 3/4 cup vegetable oil
  • 3 eggs
  • 1 cup sweetened flaked coconut
  • 1/2 cup chopped pecans
  • For frosting: 1 box instant pistachio pudding
  • 1/2 cup whole milk
  • 1 container frozen whipped topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large mixing bowl, combine the white cake mix, pistachio pudding mix, club soda, vegetable oil, and eggs. Mix with an electric mixer for 2-3 minutes until well blended.
  3. Gently fold in sweetened coconut and chopped pecans.
  4. Pour the batter into the prepared pan and bake for 30-32 minutes or until a toothpick comes out clean.
