  • 1 teaspoon baking powder
  • 1 teaspoon dried parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup cold vegan butter (cubed)
  • 1/3 cup soy milk (or any other plant-based milk)
  • 2 tablespoons olive oil
  • 1/2 large onion (finely diced)
  • 5 cloves garlic (minced)
  • 2 medium carrots (peeled & diced)
  • 2 stalks celery (diced)
  • 4 ounces mushrooms (thinly sliced)
  • 1 tablespoon tomato paste
  • 1 tablespoon vegan worcestershire sauce
  • 1 teaspoon dried parsley
  • Salt & pepper to taste
  • 15 ounce can cannellini beans (strained & rinsed; about 1.5 cups cooked beans)
  • 2.5 cups vegetable broth
  • 12 teaspoons fresh thyme (leaves only)

Instructions

  1. In a mixing bowl, combine flour, baking powder, dried parsley, salt, and pepper. Add the cubed vegan butter into the dry mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs. Slowly pour in the soy milk while stirring until just combined.
  2. In a large pot over medium heat, add olive oil. Once hot, sauté the diced onion until translucent. Add minced garlic and cook for an additional minute until fragrant. Stir in carrots, celery, and mushrooms; cook until softened.
  3. Add tomato paste and vegan worcestershire sauce to the vegetable mixture. Stir well to combine. Season with dried parsley, salt, and pepper. Next, add cannellini beans and vegetable broth; bring to a gentle boil.
  4. Once boiling, drop spoonfuls of the dumpling mixture on top of the stew. Cover tightly with a lid and reduce heat to low. Let simmer for about 15-20 minutes until dumplings are cooked through.
  5. After cooking time is complete, sprinkle fresh thyme leaves over the stew before serving.
