  • ½ cup speculoos cookie butter
  • ¼ cup powdered sugar
  • 2 tablespoons warmed cookie butter for glaze
  • Crushed speculoos cookies

Instructions

  1. Whisk together flour, eggs, milk, water, melted butter, vanilla extract, and salt in a mixing bowl until smooth. Chill the batter for at least 30 minutes.
  2. Heat a nonstick skillet over medium heat and pour about ¼ cup of batter into the skillet to form crêpes. Cook until edges are golden brown, flip, and cook briefly on the other side. Let crêpes cool completely on a wire rack.
  3. In another bowl, beat speculoos cookie butter, powdered sugar, and vanilla extract together. Gently fold in heavy cream to achieve a light and fluffy filling.
  4. Layer crêpes with filling on a serving plate until all are stacked.
  5. Chill the assembled cake in the refrigerator for at least two hours before serving.
