  • 2 cups grated zucchini, squeezed dry
  • 1 cup powdered sugar
  • 23 tablespoons lemon juice or milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a mixing bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, combine sugar, vegetable oil or melted butter, eggs, vanilla extract, lemon juice, and lemon zest.
  4. Pour the wet mixture into the dry ingredients and stir until just combined. Gently fold in grated zucchini.
  5. Pour batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted comes out clean.
  6. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
