  • 4 large russet potatoes
  • 4 slices turkey bacon
  • ½ cup sour cream
  • ⅓ cup whole milk
  • 4 tablespoons butter
  • ¾ cup cheddar cheese
  • 3 tablespoons chopped chives
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and dry the russet potatoes thoroughly. Prick them with a fork several times and place on a parchment-lined baking sheet. Bake for 50 to 60 minutes until tender.
  2. While the potatoes bake, cook the turkey bacon in a skillet over medium heat until crispy. Transfer it to a paper towel-lined plate and crumble once cooled.
  3. Once baked, let the potatoes cool slightly. Cut each potato in half lengthwise and scoop out the flesh into a mixing bowl, leaving about a ¼-inch rim.
  4. To the bowl, add sour cream, milk, butter, crumbled turkey bacon, half of the cheddar cheese, and chives. Mix until well combined.
  5. Generously fill each potato skin with the mixture and top with remaining cheddar cheese. Return to the oven for an additional 15 to 20 minutes until golden and bubbly.
  6. Garnish with extra chives before serving.
