  • 1 Tbs olive oil
  • 2 cups sliced carrots
  • 2 cups sliced sweet potatoes
  • 2 cups diced apples
  • 2 lbs ground lean turkey
  • 3 Tbs tomato paste
  • 3 cups crushed tomatoes
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 tsp rubbed sage
  • 1/2 tsp cinnamon
  • a sprinkle nutmeg
  • 12 cans kidney beans (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté carrots, sweet potatoes, and apples with onion powder, garlic powder, salt, pepper, sage, cinnamon, and nutmeg for about 5 minutes.
  3. Add ground turkey; cook until no longer pink (5–7 minutes).
  4. Stir in tomato paste and spices; mix well.
  5. Add crushed and strained tomatoes; combine thoroughly.
  6. Simmer on low-medium heat for 20–30 minutes. If using kidney beans, add them before serving.
