  • 1 cup walnuts (halves/pieces)
  • 8 oz baby spinach
  • 1 cup strawberries (sliced)
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 large avocado
  • 1 cup berries (for dressing)
  • 1/3 cup avocado oil
  • 2.5 Tbsp balsamic vinegar
  • 1 tsp stone ground mustard
  • 0.5 Tbsp maple syrup (omit for Whole30)
  • onion powder
  • sea salt
  • pepper

Instructions

  1. To make the dressing, blend all dressing ingredients except salt and pepper until smooth; season to taste.
  2. Grill seasoned chicken breasts over medium heat for 6-7 minutes per side until cooked through; set aside.
  3. Optionally, sauté walnuts with maple sugar in a skillet until caramelized.
