  • 500g Cooking Apples
  • 500g Eating Apples
  • 75g Golden Syrup
  • 75g Soft Light Brown Sugar
  • 50g Butter
  • 150g Cold Diced Butter
  • 225g Plain Flour
  • 75g Rolled Oats
  • 75g Demerara Sugar
  • 1/2 Teaspoon Vanilla Extract
  • 60ml Double Cream
  • 1 tablespoon water or apple juice
  • 1/2 Teaspoon Ground Cinnamon (optional)

Instructions

  1. Make the Toffee Sauce: In a large saucepan, combine golden syrup, soft light brown sugar, butter, vanilla extract, double cream, and water or apple juice. Cook on low heat until melted and smooth. Pour into a heatproof jug.
  2. Prepare the Crumble Mixture: In a mixing bowl, mix flour, rolled oats, and salt. Rub in cold diced butter until breadcrumb-like. Stir in demerara sugar.
  3. Cook the Apples: Preheat oven to 180°C (350°F). In a saucepan over low heat, cook sliced cooking apples with sugar and ground cinnamon for about 5 minutes. Transfer to a pie dish.
  4. Assemble: Drizzle cooled toffee sauce over the apples and top with crumble mixture evenly. Bake for 30–40 minutes until golden brown.
