  • 115 g unsalted butter (softened to room temperature)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 200 g mascarpone cheese
  • 100 g whipping cream
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, espresso powder, baking powder, baking soda, and salt.
  3. In another bowl, cream softened butter with granulated and brown sugars until fluffy. Add the egg and vanilla extract; mix well.
  4. Gradually combine dry ingredients with the wet mixture until just combined.
  5. Drop spoonfuls of dough onto the prepared baking sheet and bake for about 12 minutes or until edges are golden brown.
  6. For the topping, beat together mascarpone cheese, whipping cream, powdered sugar, and vanilla extract until smooth.
  7. Once cookies have cooled, generously spread the mascarpone topping on each cookie and dust with cocoa powder.
