  • 1/3 cup apricot preserves
  • 1/4 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 pineapple (chopped)
  • 2 cups purple grapes (halved)
  • 2 cups green grapes (halved)
  • 1 pound strawberries (hulled and quartered)
  • 5 kiwis (peeled and quartered)
  • 2 large mangos (chopped)
  • 10 ounces blueberries
  • 6 ounces raspberries (optional)
  • 2 cans mandarin oranges (drained)

Instructions

  1. In a large bowl, combine apricot preserves, sugar, lemon juice, and lemon zest until smooth.
  2. Add chopped pineapple to the glaze.
  3. Halve purple and green grapes; add to the bowl.
  4. Hull strawberries and quarter them; mix in.
  5. Peel kiwis, quarter them, and fold into the salad.
  6. Chop mangos and add to the mixture.
  7. Gently incorporate blueberries and optional raspberries.
  8. Drain mandarin oranges before adding them to the salad.
  9. Serve immediately or chill for enhanced flavors.
