  • 1 large white onion, finely diced
  • 1 large red pepper, finely diced
  • 3 cloves of garlic, finely diced
  • 2.2 lbs ground beef
  • Tomato puree
  • 1 cup / 240ml red apple vinegar
  • 2x 14oz/400g cans chopped tomatoes
  • 2x 14oz/400g cans kidney beans, drained
  • 2 beef stock cubes
  • 2 tbsp paprika
  • 2 tbsp cumin
  • 2 tbsp chilli powder
  • 1 tsp oregano
  • 1 tsp ground coriander
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a large deep pot over medium heat, sauté onion, red pepper, and garlic in olive oil until softened.
  2. Add ground beef and cook until browned. Stir in tomato puree and deglaze with red apple vinegar.
  3. Mix in canned tomatoes (with water), drained kidney beans, stock cubes, and spices.
  4. Bring to a simmer; cover and cook on low heat for 1 hour and 30 minutes, stirring occasionally.
  5. Remove the lid to thicken the sauce as desired; taste and adjust seasoning if necessary.
  6. Serve over rice with toppings like cheese, sour cream, lime wedges, and fresh coriander.
