  • 1 1/4 cups heavy cream
  • 3/4 cup whole milk
  • 1/4 cup Thai tea mix
  • 5 egg yolks
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla paste
  • 23 tablespoons granulated sugar (for caramelizing)

Instructions

  1. In a saucepan, combine heavy cream and milk over low heat until it simmers. Remove from heat and add Thai tea mix. Steep for 15 minutes.
  2. Preheat oven to 300°F (150°C).
  3. In a bowl, whisk together egg yolks, granulated sugar, and vanilla paste until combined.
  4. Strain the infused cream mixture through a fine-mesh sieve back into the saucepan and heat again until just simmering.
  5. Slowly whisk the hot cream mixture into the egg mixture to avoid curdling.
  6. Strain this combined mixture into ramekins placed in a baking pan filled with boiling water (water should not splash into ramekins).
  7. Bake for 35–40 minutes until set but still slightly wobbly at the center. Cool completely before refrigerating.
  8. To serve, sprinkle sugar on top of each custard and caramelize using a blow torch or broiler until deep amber.
