  • 1/2 cup teriyaki sauce
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • 1 cup fresh pineapple, diced
  • 1 ripe pear, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño pepper, seeded and diced
  • Juice of 1 lime
  • 2 tablespoons fresh cilantro, chopped
  • 8 small flour or corn tortillas
  • Optional toppings: sliced avocado, shredded cabbage, chopped cilantro, lime wedges

Instructions

  1. Marinate chicken strips in teriyaki sauce, minced garlic, honey, sesame oil, salt, and pepper for at least 30 minutes.
  2. Preheat grill over medium-high heat. Grill pineapple skewers for 2-3 minutes on each side until caramelized; set aside.
  3. Grill marinated chicken strips for 3-4 minutes on each side until cooked through; let rest before slicing.
  4. Combine grilled pineapple, pear, red onion, jalapeño, lime juice, cilantro, salt, and pepper in a bowl for salsa.
  5. Warm tortillas on the grill or skillet for about 30 seconds on each side.
  6. Assemble tacos by filling tortillas with chicken and topping with pineapple pear salsa and desired toppings.
