Ingredients

Scale
  • 3 tablespoons unsalted butter
  • 1 tablespoon extra virgin olive oil
  • 1 cup diced yellow onion
  • 3/4 cup grated carrots
  • 1/2 cup thinly sliced celery
  • 2 large garlic cloves, minced
  • 1/2 cup dry apple vinegar
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups half-and-half
  • 12 teaspoons fresh thyme leaves, chopped
  • 1/2 teaspoon dried Italian herb blend
  • 1 pound gnocchi
  • 2 cups cooked rotisserie chicken, shredded
  • 2 cups fresh spinach
  • 1/8 teaspoon freshly grated nutmeg (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large pot over medium heat, combine butter and olive oil. Add onion, carrots, and celery; sauté until softened (5–7 minutes). Stir in garlic and cook until fragrant (about 1 minute).
  2. Deglaze the pot with apple vinegar, scraping any browned bits. Gradually sprinkle in flour while stirring continuously to form a roux; cook until golden (about 2 minutes).
  3. Slowly whisk in chicken broth and bring to a gentle simmer. Add warmed half-and-half, thyme, and Italian herbs.
  4. Stir in gnocchi and cook according to package instructions until they float.
  5. Finally, add shredded rotisserie chicken and chopped spinach; simmer for an additional 5 minutes until heated through.
