  • optional 1 tsp ground cinnamon
  • 250 g pecans (2/3 chopped, remaining whole)
  • 70 g softened butter
  • 50 g muscovado sugar
  • 15 g cornstarch
  • 3 eggs
  • 1 tsp natural vanilla extract
  • 200 g maple syrup
  • pinch of sea salt

Instructions

  1. Cream softened butter and muscovado sugar together until smooth.
  2. Add optional cinnamon and egg; mix until combined.
  3. Gradually incorporate flour and salt to form a dough.
  4. Chill the dough for at least 1.5 hours.
  5. Roll out the dough and fit it into a tart pan; freeze for an hour.
  6. Pre-bake the crust for about 20 minutes until golden brown.
  7. Toast pecans in the oven at 170°C for 10-15 minutes; let cool.
  8. Prepare filling by creaming remaining butter with sugar and cornstarch; add eggs and vanilla.
  9. Mix in chopped pecans before pouring into pre-baked crust.
  10. Top with whole pecans and sprinkle with sea salt; bake for another 30-40 minutes.
