  • 250 g fresh strawberries
  • 60 g margarine
  • 140 g almond flour
  • 200 g all-purpose flour
  • 75 g sugar
  • 500 mL soy milk
  • 30 g corn starch
  • 3 g agar-agar
  • Fresh pineapple sage or lemon verbena
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 180°C (350°F). In a mixing bowl, combine flour, almond flour, sugar, and margarine until crumbly. Press into a tart pan and bake for about 20 minutes until golden brown. Let cool.
  2. For the custard, whisk together soy milk, corn starch, sugar, agar-agar, and fresh sage in a saucepan over low heat until thickened. Remove from heat and stir in vanilla and margarine until smooth.
  3. Pour the custard over the cooled crust and top with sliced strawberries. Chill for at least two hours before serving.
