  • 1/2 tsp nutmeg

Instructions

  1. Cook the sweet potato by microwaving it for about 5–7 minutes or roasting at 400°F for 45–60 minutes until tender. Mash until smooth.
  2. In a mixing bowl, beat together softened butter, brown sugar, and granulated sugar until fluffy (about 2 minutes). Add in the egg, vanilla extract, and mashed sweet potato; mix until combined.
  3. In a separate bowl, whisk together flour, cinnamon, nutmeg, ginger, baking soda, and salt.
  4. Gradually add dry ingredients to the wet mixture and stir just until combined.
  5. Drop tablespoon-sized balls of dough onto parchment-lined baking sheets.
  6. Preheat oven to 350°F (175°C) and bake cookies for about 10–12 minutes or until edges are golden brown while centers remain soft.
  7. Allow to cool on the pan for about 5 minutes before transferring to a wire rack.
