  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon cinnamon

  • 1/2 to 1 cup vegetable broth (optional for consistency)

Instructions

  1. Prepare all ingredients by peeling and dicing sweet potatoes and chopping the vegetables.
  2. In a skillet, sauté onion in olive oil until translucent. Add garlic and bell peppers; cook for an additional few minutes.
  3. Transfer sautéed vegetables to the crock pot along with sweet potatoes, black beans, diced tomatoes, and spices.
  4. Cover and set the crock pot on Low for 6–8 hours or High for 3–4 hours.
  5. Adjust the consistency with vegetable broth as desired before serving.
