  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Dice sweet potatoes and toss them with olive oil, salt, and pepper on the baking sheet. Roast for 20-25 minutes until tender.
  3. While roasting, whisk together olive oil, lime juice, cumin, smoked paprika, garlic powder, salt, and pepper in a small bowl.
  4. In a large bowl, combine cooled sweet potatoes with black beans, chickpeas, diced bell pepper, and red onion.
