  • 2 Sweet Potatoes (1 pound each), quartered
  • 1 Large Tart Apple, peeled and cored
  • 2 Tablespoons Olive Oil
  • 1 Onion, chopped
  • 2 Stalks Celery, chopped
  • 1 Large Carrot, chopped
  • 5 Cups Chicken Broth
  • 1 Cup Cream
  • Zest and juice of 1 Lemon
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange quartered sweet potatoes and apple on a greased baking sheet in a single layer.
  3. Roast for about 40 minutes or until tender.
  4. In a soup pot, heat olive oil over medium heat; sauté onion, celery, carrot, and bay leaf until tender (5-7 minutes).
  5. Remove bay leaf; add chicken broth and roasted sweet potato and apple mixture.
  6. Puree the soup until smooth using an immersion blender or regular blender.
  7. Stir in cream along with lemon zest and juice; season with salt and pepper.
  8. Heat gently before serving, garnished with crumbled goat cheese or feta if desired.
