  • 1/2 avocado, sliced
  • 1/2 cup mushrooms, sliced
  • 1 cup fresh spinach
  • 1 tomato, halved
  • 2 slices halloumi cheese
  • 1 tbsp olive oil or butter
  • Salt, to taste
  • Pepper, to taste
  • Chili flakes (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. In a non-stick pan, heat olive oil over medium heat. Fry the eggs sunny-side up until the whites are set and the yolks remain runny. Season with salt and chili flakes.
  2. In another pan, sauté the sliced mushrooms in olive oil for 5-7 minutes until golden brown. Season with salt and pepper.
  3. Add fresh spinach to the mushrooms and sauté for an additional 1-2 minutes until wilted.
  4. In a hot grill pan, sear halved tomatoes and halloumi slices until golden brown on each side (about 1-2 minutes).
  5. Plate the eggs, sautéed veggies, grilled tomato, and halloumi beautifully. Garnish with parsley if desired.
