  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 1 egg
  • 1 tbsp milk (for brushing)
  • 1/2 cup chopped strawberries (for glaze)
  • 1 tbsp white sugar (for glaze)
  • 1 cup powdered sugar (for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Cut in the cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together buttermilk, vanilla extract, and egg until smooth. Gradually mix this into the dry ingredients until just combined; fold in chopped strawberries gently.
  5. On a floured surface, shape the dough into an 8-inch circle. Wrap it in plastic wrap and freeze for 30 minutes.
  6. After chilling, cut into 8 triangles and place on the baking sheet. Brush tops with milk before baking for 13-15 minutes until golden brown.
  7. Cool on a wire rack before glazing with your strawberry glaze made from powdered sugar and milk.
