  • 1 tablespoon lemon juice
  • to ½ cup sugar (adjust based on strawberry sweetness)
  • 1 tablespoon quick-cooking tapioca or cornstarch
  • Pinch of salt

Instructions

  1. Blend half a cup of sliced strawberries with lemon juice and half a cup of water until smooth.
  2. In a pot, combine sugar, tapioca (or cornstarch), and salt. Stir in the blended strawberry mixture and heat over medium until boiling.
  3. Reduce heat to simmer if using tapioca; cook while stirring for about 5 minutes until thickened. If using cornstarch, skip simmering once thickened.
  4. Stir in the remaining sliced strawberries and return to a simmer before turning off the heat.
  5. Allow to cool in a wide container before transferring to a jar for storage.
