  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups diced strawberries (fresh or frozen)

Instructions

  1. Preheat the oven to 425°F. Line muffin tins with holders or spray with nonstick spray.
  2. In a large bowl, mash the ripe bananas. Add sugar, sour cream, milk, egg, and vanilla extract; mix until smooth.
  3. Sift together flour, baking powder, baking soda, and salt; fold into the wet ingredients gently until just combined.
  4. Carefully fold in the diced strawberries.
  5. Fill each muffin cup with batter until full. Optionally top with extra strawberries.
  6. Bake for 5 minutes at 425°F, then reduce temperature to 350°F and bake an additional 10-12 minutes until golden brown.
