  • 150 g mixed salad of choice
  • 1 large handful of fresh basil (whole leaves or roughly chopped)
  • 300 g fresh strawberries (hulled and halved)
  • 1 large mango (chopped)
  • 100 g feta cheese (optional)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp honey
  • 1 medium lemon (juice and zest)
  • 2 tsp fresh ginger (grated)

Instructions

  1. Toast the flaked almonds in a small frying pan over medium heat for about 2 minutes until golden brown and fragrant. Set aside.
  2. In a large mixing bowl, combine mixed salad greens, fresh basil, halved strawberries, and chopped mango. Toss gently to mix.
  3. Crumble feta cheese over the top (if using) and sprinkle toasted almonds. Toss lightly again before serving.
