  • 1 ½ lbs skirt steak
  • 1 lb purple cabbage, thinly sliced
  • 1 large red pepper, halved and seeded
  • 1 large poblano pepper, halved and seeded
  • 1 red onion, cut into wedges
  • Olive oil
  • Kosher salt
  • 12 tortillas
  • 6 oz queso fresco, crumbled
  • ½ cup freshly squeezed orange juice
  • 2 tsp orange zest
  • 1 can chipotle peppers in adobo sauce
  • 2 tbsp honey
  • neutral oil

Instructions

  1. Preheat your oven to 425°F.
  2. Roast the red and poblano peppers and red onion on a sheet pan drizzled with olive oil for about 35-40 minutes. Toss sliced cabbage in olive oil and roast for an additional 25-30 minutes until caramelized.
  3. Prepare the steak by letting it sit at room temperature for about 30 minutes before cooking.
  4. In a food processor, blend orange juice, zest, chipotle peppers with adobo sauce, honey, and neutral oil until smooth.
  5. Sear the skirt steak in a hot cast iron skillet for about 3-5 minutes per side to reach desired doneness. Let rest before slicing.
  6. Assemble tacos: Place roasted slaw on charred tortillas, top with steak slices and drizzle with chipotle sauce.
