This recipe features thick slices of roasted cauliflower, perfectly seasoned and complemented by a smooth purée made from sweet potatoes. Not only is it simple to prepare, but it’s also gluten-free and packed with nutrients, making it an excellent choice for family dinners or meal prep.

  • 1 head cauliflower
  • 2 large sweet potatoes
  • 110 mL soy cream
  • 1 tbsp vegan butter
  • Olive oil
  • Garlic powder
  • Salt
  • Pepper
  • Fresh herbs (for garnish)
  • Chopped pistachios (for garnish)

Instructions

  1. Preheat oven to 210 °C (410 °F).
  2. Slice the cauliflower into thick steaks, season with olive oil, garlic powder, salt, and pepper on both sides, then place on a baking sheet lined with parchment paper.
  3. Roast for about 30 minutes, flipping halfway until golden brown and tender.
  4. Meanwhile, boil chopped sweet potatoes in a large pot until fork-tender (15-20 minutes). Drain well.
  5. Mash the sweet potatoes in a bowl, adding soy cream and vegan butter until creamy. Season with salt and pepper.
  6. Serve by spooning mashed sweet potatoes onto each plate, topping with roasted cauliflower steaks, warm lentils, fresh herbs, and chopped pistachios.
