  • 1 cup chicken stock
  • 1 cup heavy cream
  • 3 tbsp peri-peri sauce
  • 2 cups cooked white rice
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • 1 medium onion, finely chopped
  • 1 tsp lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with smoked paprika, garlic powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 3-4 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, sauté chopped onion and minced garlic until soft.
  4. Add chicken stock, heavy cream, peri-peri sauce, and lemon juice; simmer until slightly thickened.
  5. Return the chicken to the skillet and coat with the sauce; simmer until fully cooked (165°F internal temperature).
  6. Serve over garlic rice and garnish with chopped parsley.
