  • 1 salmon fillet (46 oz)
  • 1 tsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 cup Brussels sprouts, halved
  • 1 cup green beans
  • 1 cup steamed broccoli
  • Squeeze of lemon juice or red pepper flakes (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss halved Brussels sprouts in olive oil, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes until crispy.
  3. Rub the salmon fillet with olive oil, smoked paprika, garlic powder, salt, and pepper. Sear in a nonstick skillet over medium-high heat for 3–4 minutes per side until cooked through.
  4. Sauté green beans in olive oil for 5–7 minutes until tender-crisp.
  5. Steam broccoli for about 4–5 minutes until tender-crisp.
  6. Assemble your bowl with salmon at the center, surrounded by Brussels sprouts, green beans, and broccoli. Drizzle with lemon juice if desired.
