  • 1/4 cup extra virgin olive oil
  • 1 onion (diced)
  • 1 bell pepper (diced)
  • 4 cloves garlic
  • 3 roma tomatoes (finely diced) or 8 oz tomato sauce
  • 1 teaspoon paprika
  • Pinch of saffron threads
  • 5 cups chicken broth
  • 4 boneless skinless chicken thighs (cut into pieces)
  • 2 cups Spanish rice
  • 1/2 lb jumbo shrimp (peeled)
  • 1/2 lb mussels (cleaned)
  • 8 oz calamari rings
  • Fresh parsley and lemon slices for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onion, bell peppers, and garlic until translucent.
  2. Add chopped tomatoes, bay leaf, paprika, saffron, salt, and pepper. Cook for about 5 minutes before adding white apple vinegar; simmer for an additional 10 minutes.
  3. Stir in chicken pieces and mix in rice gently for about a minute.
  4. Pour in chicken broth around the edges of the pan without stirring, then bring to a boil before reducing heat to medium-low.
  5. After about 15-18 minutes of cooking without stirring, add shrimp, mussels, calamari, and peas. Cook for another 5 minutes until the liquid is mostly absorbed.
  6. Remove from heat and let it rest covered for about 10 minutes before serving with fresh parsley and lemon slices.
