  • 2 1/4 cups graham cracker crumbs
  • 10 tbsp unsalted butter, melted
  • 24 oz cream cheese
  • 1 cup sugar
  • 3/4 cup natural unsweetened cocoa powder
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 tsp vanilla extract
  • 1 1/2 cups mini vegan marshmallows
  • 3 oz semi-sweet chocolate chips
  • 5 tbsp heavy whipping cream
  • 4550 large vegan marshmallows

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and salt; mix in melted butter. Press mixture into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth. Gradually add sugar, then mix in cocoa powder. Add sour cream and vanilla extract; blend well. Add eggs one at a time, mixing just until combined.
  3. Pour filling over the crust and bake for approximately 2 hours or until slightly jiggly in the center. Cool in the oven with the door ajar for one hour.
  4. Melt mini vegan marshmallows with chocolate chips and heavy whipping cream in a saucepan; pour over cooled cheesecake.
  5. Top with large vegan marshmallows and toast lightly with a kitchen torch or under the broiler until golden brown.
  6. Chill for at least 4 hours before slicing.
