  • 2 Hershey bars (broken into bits)
  • 1 cup mini vegan marshmallows

  1. Preheat oven to 375°F and line cookie sheets with parchment paper.
  2. Cream softened butter with white and brown sugars until light and fluffy.
  3. Add egg and vanilla extract; mix until well combined.
  4. In another bowl, combine flour, graham cracker crumbs, baking soda, and salt. Gradually add to the creamed mixture until just incorporated.
  5. Fold in the semi-sweet and milk chocolate chips gently.
  6. Use a large cookie scoop to portion dough onto prepared sheets, spacing them three inches apart.
  7. Bake for about ten minutes until lightly golden on the edges.
  8. Press mini vegan marshmallows into each cookie before returning them to the oven for an additional three to four minutes.
