8 oz smoked salmon
4 cups mixed greens
1 medium cucumber
1 cup cherry tomatoes
1/2 medium red onion
4 oz feta cheese
1/2 cup olives
2 tbsp lemon juice
3 tbsp olive oil
1 tbsp dill
1/2 tsp salt
1/4 tsp pepper
Instructions
Wash all vegetables thoroughly. Chop cucumber into bite-sized pieces and halve the cherry tomatoes. Thinly slice the red onion.
In a large mixing bowl, add mixed greens as your base. Layer on chopped cucumber, halved cherry tomatoes, and sliced red onion. Gently place pieces of smoked salmon on top.
Sprinkle feta cheese and olives over the salad mixture.
In a small bowl, whisk together lemon juice, olive oil, dill, salt, and pepper until well combined.
