  • 6 to 8 mini cucumbers
  • 1 pinch of kosher salt
  • 1 pinch of sugar
  • 1 avocado, (thinly sliced)
  • 1 tablespoon toasted sesame seeds
  • 1 tablespoon chopped chives
  • Chive blossoms, (for garnish)
  • 2 tablespoons rice vinegar
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon tamari or soy sauce
  • 2 teaspoons honey
  • 2 garlic cloves, (minced)
  • ½ lime, (juiced)
  • 1 pinch crushed red pepper flakes

Instructions

  1. Prepare the cucumbers by cutting them into halves or quarters. Gently smash each piece using a jar or meat tenderizer. Place in a strainer over a bowl and sprinkle with salt and sugar. Let sit for 30 minutes to drain excess moisture.
  2. In a bowl, whisk together rice vinegar, toasted sesame oil, tamari, honey, minced garlic, lime juice, and crushed red pepper flakes until well blended.
  3. After draining the cucumbers, transfer them to a large bowl. Add sliced avocado and pour the dressing over the top. Toss gently to combine. Sprinkle with toasted sesame seeds and chopped chives before serving.
