  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 can diced tomatoes with green chilies (14.5 oz)
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can corn (15 oz), drained
  • 1 cup salsa
  • 6 small flour or corn tortillas, cut into strips
  • 1 cup shredded Mexican cheese blend

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef. Drain excess fat.
  2. Add diced onion to the skillet and sauté until softened; add minced garlic and cook for an additional minute.
  3. Stir in taco seasoning and diced tomatoes; remove from heat.
  4. Spray the slow cooker with non-stick cooking spray. Layer salsa on the bottom, followed by tortilla strips, half the beef mixture, black beans, and corn. Repeat layers and top with remaining tortilla strips and salsa.
  5. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  6. About 15 minutes before serving, sprinkle cheese on top to melt.
  7. Garnish with chopped cilantro and serve with optional toppings.
