  • 23 boneless chicken breasts
  • 2 cups corn (frozen, canned, or fresh)
  • 4 oz cream cheese, cubed
  • 1/3 cup cotija cheese
  • Juice of 1 lime
  • 2 garlic cloves, minced
  • 1/2 tsp chili powder
  • Optional: 1/2 tsp smoked paprika
  • Optional: Fresh cilantro
  • Optional: 1/2 tsp onion powder

Instructions

  1. Place chicken in the slow cooker.
  2. Top with corn, cream cheese cubes, cotija cheese, lime juice, minced garlic, and chili powder without stirring.
  3. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours until chicken shreds easily.
  4. Shred chicken directly in the pot using two forks.
  5. Stir all ingredients together until creamy. If needed, add a splash of broth or milk to adjust consistency.
