  • 2 lbs beef chuck
  • 1 large onion
  • 4 garlic cloves
  • 1 tbsp ginger
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp chili powder (optional)
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup beef broth
  • 1 tbsp tomato paste
  • Salt and pepper to taste
  • 2 tbsp oil

Instructions

  1. Heat oil in a skillet over medium-high heat and brown the beef cubes for 5-7 minutes. Remove from skillet.
  2. In the same skillet, sauté diced onion, minced garlic, and grated ginger until softened. Stir in curry powder, ground cumin, turmeric, paprika, and chili powder if using, and cook for an additional minute.
  3. Transfer sautéed vegetables to a slow cooker, add the browned beef, coconut milk, diced tomatoes, beef broth, tomato paste, salt, and pepper.
  4. Cook on low for 6-8 hours or high for 4 hours until beef is tender.
  5. Serve hot with warm garlic naan.
