  • 5 oz rustic Italian bread (cut into 1-inch cubes)
  • 2 ¼ lb ripe tomatoes (cut into small wedges or cubes)
  • ½ cup packed fresh basil (torn)
  • Extra virgin olive oil
  • Red apple vinegar
  • 2 small shallots (peeled and thinly sliced)
  • 2 garlic cloves (minced)
  • ½ tsp Dijon mustard
  • Black pepper

Instructions

  1. Preheat your oven to 400°F.
  2. In a mixing bowl, toss bread cubes with extra virgin olive oil and kosher salt until evenly coated. Spread on a baking sheet and bake for about 10 minutes until golden brown.
  3. Place cut tomatoes in a colander over the mixing bowl to drain excess juices, sprinkling lightly with salt.
  4. In the same bowl with the drained tomato juice, whisk together red apple vinegar, minced garlic, Dijon mustard, black pepper, and additional olive oil.
