  • 1 cup uncooked lentils (green, brown, or black)
  • 4 cups water
  • 1 medium cucumber, diced
  • 1/2 small red onion, thinly sliced
  • 1 1/2 cups grape or cherry tomatoes, halved
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup chopped roasted red bell pepper
  • 2 tbsp fresh orange juice
  • 2 tbsp fresh lemon juice
  • 1 tbsp dijon mustard
  • 1 tbsp honey or agave
  • 1/4 cup extra-virgin olive oil
  • Salt and black pepper, to taste

Instructions

  1. Rinse lentils under cold water. In a medium pot, combine lentils, water, and a bay leaf. Bring to a boil over medium-high heat; reduce heat to low and simmer uncovered for about 18 minutes until tender but firm. Drain excess water and discard the bay leaf.
  2. While lentils cook, prepare the vegetables: dice cucumber, slice red onion thinly, halve tomatoes, slice olives, and chop roasted red bell pepper.
  3. In a large mixing bowl, combine cooked lentils with prepared vegetables.
  4. In a small bowl, whisk together orange juice, lemon juice, dijon mustard, honey (or agave), olive oil, salt, and black pepper until well combined.
  5. Pour dressing over the lentil salad mixture and toss gently to coat evenly. Adjust seasoning if necessary before serving.
