  • 2 tablespoons olive oil
  • 2 tablespoons salted butter
  • 1/2 cup chopped onion
  • 5 cloves garlic (minced)
  • 1.5 cups cooked corn kernels
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt (to taste)
  • 1 teaspoon smoked paprika
  • 1 cup half-and-half
  • 4 oz feta cheese (crumbled)
  • 2 small limes
  • Fresh cilantro

Instructions

  1. Prepare ingredients: peel shrimp, chop onion, and mince garlic.
  2. Heat olive oil and butter in a large skillet over medium heat. Cook shrimp seasoned with chili powder and salt until pink, about 3-4 minutes. Remove from skillet.
  3. Sauté onions and garlic in the same skillet until translucent, about 3-5 minutes.
  4. Stir in cooked corn and smoked paprika; cook for another 2-3 minutes.
  5. Pour in half-and-half while stirring continuously; gradually add crumbled feta until melted into sauce.
  6. Return shrimp to skillet; toss to combine and heat through.
  7. Serve with lime juice squeezed on top and garnish with fresh cilantro.
