1.5 lb raw shrimp (peeled and deveined)
2 tablespoons olive oil
2 tablespoons salted butter
1/2 cup chopped onion
5 cloves garlic (minced)
1.5 cups cooked corn kernels
1 teaspoon chili powder
1/4 teaspoon salt (to taste)
1 teaspoon smoked paprika
1 cup half-and-half
4 oz feta cheese (crumbled)
2 small limes
Fresh cilantro
Instructions
Prepare ingredients: peel shrimp, chop onion, and mince garlic.
Heat olive oil and butter in a large skillet over medium heat. Cook shrimp seasoned with chili powder and salt until pink, about 3-4 minutes. Remove from skillet.
Sauté onions and garlic in the same skillet until translucent, about 3-5 minutes.
Stir in cooked corn and smoked paprika; cook for another 2-3 minutes.
Pour in half-and-half while stirring continuously; gradually add crumbled feta until melted into sauce.
Return shrimp to skillet; toss to combine and heat through.
Serve with lime juice squeezed on top and garnish with fresh cilantro.
