  • 1 tablespoon vinegar (white or apple cider)
  • 1 egg
  • 3 tablespoons butter, melted
  • 1 1/2 cups grated sharp cheddar
  • 2 green onions, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9 x 5-inch bread pan.
  2. Wrap the grated zucchini in a paper towel and squeeze out excess moisture.
  3. In a mixing bowl, combine flour, baking powder, baking soda, and salt.
  4. In a separate bowl, mix milk with vinegar to create homemade buttermilk. Add melted butter and egg; mix well.
  5. Combine wet and dry ingredients until just mixed; do not overmix.
  6. Gently fold in zucchini, cheese, and green onions until evenly distributed.
  7. Pour the batter into the prepared pan and bake for about one hour or until a toothpick comes out clean.
  8. Let cool in the pan for ten minutes before transferring to a wire rack.
