  • 1 carrot, peeled and diced
  • 1 celery stalk, diced
  • 1 tablespoon tomato paste
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon rosemary
  • 1/4 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 1/2 cup beef or vegetable broth
  • 1/2 cup frozen peas
  • Sweet potatoes (for topping)

Instructions

  1. Prepare the vegetables by dicing the onion, carrot, and celery, and mincing the garlic.
  2. In a cast iron skillet over medium heat, add olive oil and sauté the onion until translucent (about 3–4 minutes).
  3. Stir in the garlic, carrot, and celery; cook for an additional 5 minutes until softened.
  4. Add ground lamb to the skillet and cook until browned.
  5. Mix in tomato paste, Worcestershire sauce, thyme, rosemary, cinnamon, salt, pepper, and broth. Simmer for about 10 minutes before folding in frozen peas.
  6. Boil peeled sweet potato chunks in salted water for about 15 minutes until tender. Drain and mash until creamy; season with salt and pepper.
  7. Preheat oven to 400°F (200°C). In a baking dish, layer the lamb filling then top with sweet potato mash; smooth out.
  8. Bake for about 20–25 minutes or until golden on top.
