  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup plus 2 tbsp all-purpose flour
  • 1 tsp matcha powder
  • 1 cup dark chocolate chunks
  • 2 tbsp ground pistachios

Instructions

  1. Prepare pistachio paste by grinding roasted pistachios in a food processor with olive oil until thick.
  2. In a mixing bowl, cream together softened butter with the sugars until fluffy. Beat in the egg and extracts, then mix in the pistachio paste.
  3. In another bowl, combine flour, matcha powder, baking soda, and salt. Gradually fold into the wet mixture until combined, then stir in dark chocolate chunks.
  4. Chill dough for two hours covered with plastic wrap.
  5. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Scoop and space dough on prepared sheets; sprinkle additional ground pistachios if desired.
